ONION KULCHA

Onion Kulcha



Ingredients

For dough:

All purpose flour – 4 cups
Milk – ½ cup
Yogurt – 1 tbsp
Egg – 1
Sugar – 1tsp
Warm water – 1 cup
Baking powder – 1 tsp
Vegetable oil – 1 tbsp
Salt to taste

For filling :

Onions(small) – 2
Chilly powder – ½ tsp
Green chilly – 1 (minced)
Minced coriander leaves – 1 tbsp
Melted butter – 3 tbsp
Salt to taste

Directions

To make the dough:

1. Whisk together milk, sugar, yogurt, water and egg.
2. Mix together the flour, baking powder and salt.
3. Add the whisked mixture into it and knead till it becomes soft dough. (Warm water can be added if necessary)
4. Oil the dough, cover with a damp cloth and keep it aside for about 2 hrs. The dough will double its size by then.

To make the filling:

1. Squeeze out all the water from the chopped onions.
2. Combine all the ingredients of the filling. If it appears watery, add a small bolied potato and mix well.

To make Kulcha:

1. Preheat the oven to 400 degrees, and keep two lightly oiled baking sheets.
2. Lightly dust the rolling surface with flour.
3. Roll the dough into a log and cut it into 8 equal portions. Take one portion of the dough and roll into a ball between the palms of your hands, flattening the ball. Place it on the floured surface and roll it out into a circle about 6 inches in diameter.
4. Add a tablespoon of the filling to the center and bring the sides up and together, pinching them to seal and form a ball.
5. Flatten lightly. Dust very lightly with flour. Roll again about 5 - 6 inches in diameter.
6. Dip your fingers in water and moisten the surface of the kulcha very lightly. Continue until you have made 8 kulchas (four per baking sheet).
7. Place the kulchas in the oven for 5 minutes. Turn on the broiler and broil for an additional 3 minutes or until golden brown. Serve hot.
