BHATURA

Bhatura

Ingredients

All Purpose Flour - 2 cups
Fine Sooji / Semolina -2 tbsp
Sugar - 1 tbsp
Baking Soda - 1/8 tsp
Baking Powder - 1/2 tsp
Vegetable Oil -1/4 cup
Plain yoghurt - 1/4 cup
Salt - 1tsp
Oil for frying

Directions

1.Mix maida, sooji, sugar, salt, baking soda and baking powder in a bowl.
2.Add oil and plain yoghurt and mix well.
3.Add water and mix to make a very soft dough.
4.Cover the dough and keep aside for 2-3 hours or for best result overnight until it doubles in size.
5.Knead the dough for 6-8 minutes until it is soft and smooth.
6.Divide the dough into 8-10 equal balls.
7.Take one dough ball and roll to make a round or oval bhatura.
8.The edges of the bhatura should be a little thicker than the centre.
9.Heat oil for frying in a pan.
10.Slide the bhatura in the hot oil and fry from both the sides until golden brown.
11.Keep pressing the bhatura with a perforated ladle.
12.Once done, remove the bhatura on to a tissue lined plate.
13.Serve hot with vegetable stew or chole.
