RAJMA

Rajma/Kidney beans

Curry






Ingredients

Red kidney beans – 200 gms
Medium sized onions – 2(chopped)
Ginger – 2’’ piece(chopped)
Garlic – 6 cloves(minced)
Tomatoes (large) – 2 (chopped to 1’’ cubes)
Chilly powder – 1 tsp OR 2 green chillies (chopped)
Coriander powder -2 tsp
Cumin powder – 1 tsp
Garam masala – 1 tsp
Turmeric powder – ¼ tsp
Cumin seeds – 1 tsp
A pinch of asafetida
Salt to taste
Cooking oil
Coriander leaves

Directions

1. Heat oil in a deep pan and add the cumin seeds.Add onion and fry till it becomes soft and glassy.
2. Add ginger and garlic. Fry for 2 minutes.
3. Add chilly powder, coriander powder, cumin powder, turmeric powder, garam masala powder and tomato. Fry till oil separates from the masala.
4. Add the red kidney beans, 3 cups of warm water, asafetida, salt to taste and cook till the beans are done.
5. Garnish with coriander leaves and serve hot.

CHANA MASALA

Chole/Chana Masala




Ingredients

Chick Peas – 1 cup
Onion – 1 (medium)
Garlic cloves – 3
Ginger – 3 cm
Cumin powder – 1½ tsp
Coriander powder – 2 tsp
Chilly powder – 1 ½ tsp
Tomatoes – 2 ( medium)
Garam masala – 1 tsp
Cooking oil
Salt to taste
Coriander leaves

Directions

1.Soak the chick peas overnight and pressure cook it with salt till it is done.
2. Chop the tomatoes, onion, garlic and ginger.
3. Heat oil in a pan, add the onion and sauté for 4-5 minutes. Add the ginger, garlic and tomatoes and sauté for another 3-4 minutes.
4. Add the chilly powder, coriander powder, cumin powder and garam masala. Stir constantly.
5. Add the cooked chick peas, add a little water and boil well.
6. Add salt to taste and garnish with coriander leaves.

BHEL PURI

Bhel Puri




Ingredients

Puffed rice - 4 cups
Sev - 2 cups
Onion - 1 (finely chopped)
Tomato - 2(finely chopped)
Lemon - 2 small (juice)
Tumeric powder - 1 tsp
Cucumber – ½ cup (finely chopped)
Potatoes - 2 (boiled,peeled & cubed)
Salt &chilly powder - according to taste
Green chutney
Sweet chutney


Green chutney
Ingredients

Cilantro – ½ bunch
Green chillies - 6
Potato wafers -1 tsp
Salt & lemon juice to taste

Direction
Blend all the above to a fine paste & reserve.

Sweet/sour chutney

Ingredients

Tamarind extract - 1 cup
Pitted Dates – ½ cup
Brown sugar - 1 tbsp.
Cumin Powder - 2 tsp.
Chilly Powder - 2 tsp.
Salt to taste

Directions

1. Boil the above till they reduce by half & cool.
2. Grind it to a smooth consistency.

Bhel Puri

Mix all the ingredients & serve in an individual plates
immediately.
