MUTTON CUTLET

Mutton Cutlet



Ingredients

Ground lamb – 500 gms
Ginger- garlic paste – 2 tsp
Potatoes – 2 (cut)
Onion (large) -1 (chopped)
Green chillies – 3 (Minced)
Fresh ground pepper – to taste
Egg – 1 (beaten)
Bread crumbs – 2 cup
Coriander leaves – ½ bunch
Cooking oil (for deep frying)
Salt to taste

Directions

1. Pressure cook the mutton(ground lamb) with a little oil, ginger-garlic paste and salt.
2. When it is cooked well, check whether there is water in it, if water is still there then heat till it evaporates.
3. Heat 1 tbsp oil in a pan, add chopped onion, chillies, potatoes and coriander leaves.
4. Cover and cook till the vegetables are well cooked(It should be dry too).
5. Mash all the vegetables. Add the cooked mutton mixture to it. Mix well.
6. Take the mixture, make small balls, flatten them in your palm and make round cutlets.
7. Dip them in beaten egg, coat them evenly with bread crumbs and deep fry in oil or bake until crisp and evenly brown.
8. Serve hot.

VEGETABLE CUTLET

Vegetable Cutlet




Ingredients

Finely chopped carrots, beans & cabbage – 2 cups
Potatoes – 3 (boiled & mashed)
Fresh green peas – ¼ cup
Onions – 2 (chopped)
Green chilly paste – 1 tsp
Ginger paste – 1 tsp
Garam masala powder – 1 ½ tsp
Cooking oil
Bread crumbs
Salt to taste

Directions

1. Steam the chopped vegetables and peas in a pressure cooker.
2. Heat oil in a pan and add ginger & green chilly paste and sauté.
3. Add onion and fry till it becomes golden brown.
4. Add the mashed potatoes and steamed vegetables. Fry for 10 minutes.
5. Mix garam masala and salt to the vegetables and sauté well.
6. Make lemon sized balls out of this mixture when it cools and coat it with bread crumbs.
7. Flatten this into thin patties.
8. Heat oil in a frying pan and fry the cutlets until both sides become brown.
9. Place the fried cutlets on napkins to drain the excess oil and serve hot.

CHICKEN CUTLET

Chicken Cutlets



Ingredients

Chicken (boneless, skinless) - 500 gms
Egg white - 3
Green chillies – 6
Onions - 2 (large)
Ginger – 2 inches piece
Garlic cloves – 4
Potatoes – 3 (large)
Turmeric powder – 1 tsp
Coriander powder – 1 tsp
Pepper powder – 1 tsp
Garam masala powder – 1 tsp
Bread crumbs
Oil to fry
Salt to taste

Directions

1. Cook chicken with little salt and pepper powder till chicken becomes tender.
2. Mash with well with hands or a spoon.
3. Cook potatoes with little salt and mash them well too.
4. Heat 2 tsp of oil in a pan. Sauté chopped onion, garlic, ginger and green chillies together.
5. Add coriander powder, pepper powder and turmeric powder and sauté well.
6. Add garam masala powder.
7. Finally, add mashed chicken and potatoes into this and mix well.
8. Beat egg white with little salt in a bowl.
9. Make small oval shaped cutlets with chicken potato mix. ( Use a spoon to shape them easily)
10. Dip in beaten egg, coat them with a thin layer of bread crumbs and shallow fry.
11. Serve hot with tomato sauce.

BEEF CUTLET

Beef Cutlet





Ingredients

Beef - 500 gms
Egg white - 3
Green chillies – 6
Onions - 2 (large)
Ginger – 2 inches piece
Garlic cloves – 4
Potatoes – 3 (large)
Turmeric powder – 1 tsp
Coriander powder – 1 tsp
Pepper powder – 1 tsp
Garam masala powder – 1 tsp
Bread crumbs
Oil to fry
Salt to taste
Coriander leaves

Directions

1. Cook beef with little salt and pepper powder till beef becomes tender.
2. Mash with well with hands or a spoon.
3. Cook potatoes with little salt and mash them well too.
4. Heat 2 tsp of oil in a pan. Sauté chopped onion, garlic, ginger and green chillies together.
5. Add coriander powder, pepper powder and turmeric powder and sauté well.
6. Add garam masala powder and chopped coriander leaves.

FISH CUTLET

Fish Cutlet






Ingredients

Fish (boneless, skinless) – ½ kg/1 lb
Garlic cloves – 2
Green chilly – 1
Ginger – ½ inch piece
Shallots – 2
Chilly powder – 2 tsp
Turmeric powder – ¼ tsp
Pepper powder – ½ tsp
Egg white – 2
Bread crumbs – 2 tsp
Salt to taste
Vegetable oil


Directions

1.Wash, clean and cut fishes into small pieces.
2. Apply red chilly powder, turmeric and salt on each of the pieces and cook in little water.
3. Drain all the water and mash the fish.
4. Grind coarsely onion, green chilly, ginger and garlic in a blender.
5. Heat 2 tsp oil in a pan, add the coarsely ground paste and sauté till the raw smell goes.
6. Add mashed fish and pepper powder.
7. Mix all the ingredients well and make small round balls out of the mixture.
8. Beat the two egg whites in a bowl.
9.
Dip the fish balls in the egg white and roll them over the bread crumbs so that it gets evenly coated on all sides.
10. Deep fry the cutlets in heated oil till they become golden brown in colour.
