Tindora/Kovaikkai Fry
Ingredients
Tindoras/kovaikkai - 1 lb/ ½ kg
Shallots - 3 Nos
Turmeric powder- ¼ tsp
Chilly powder 1-2 tsp
Cooking oil - 3 tsp
Salt to taste
Crisply fried curry leaves for garnishing.
Directions
1.Cut the vegetable thin and round.
2.Heat oil in a pan and add the cut tindoras and salt, cover and cook over medium heat. Don't add any water. Let the vegetable get cooked with its own water content.
3.Once the vegetable is cooked, remove the lid and turn the stove to high flame.
4.Add turmeric powder,chilly powder and chopped shallots.Stir and fry them till raw smell of chilly powder goes and oil shows up on sides.
5.Garnish with crisply fried curry leaves.
