Appam
Ingredients
Raw rice (white) – 2 cups
Cooked rice – ½ cup
Coconut milk – 1 cup
Sugar – 2 tsp
Dry yeast – ½ tsp
Warm water – 2tsp
Salt to taste
Cooking oil
Directions
1. Wash and soak the rice for 3-4 hours. Drain and keep aside.
2. Grind the raw rice and cooked rice in a blender with a little coconut milk.
3. Remove from the blender and add the sugar, the remaining coconut milk and salt.
4. Mix the yeast with a little warm water and add to the blended rice. Mix well and make sure that the batter is smooth and of dropping consistency. If it is hard dilute it with 2-3 tsp of coconut milk.
5. Keep the batter covered for 4-5 hours.
6. Heat appam pan or a deep non- stick pan and grease it lightly with oil. Pour 1 big spoon of batter into it. Slowly rotate the batter on the pan so that a thin layer forms on the sides while the middle remains thick.
7. Cover and cook for a minute, till the middle part becomes fluffy and edges become golden.
8. Repeat with the remaining batter. 10-12 appams can be made with the batter.
