GARLIC PICKLE

Garlic Pickle




Ingredients

Garlic pods – 4 medium sized
Lemon – 1
Chopped ginger – 1 tsp
Chilly powder - 2 tsp
Turmeric powder – ¼ tsp
Fenugreek powder – 1 tsp
Mustard seeds – 1 tsp
Asafoetida – ¾ tsp
Gingely oil – 2 tsp
Vinegar – 1 tsp
Curry leaves
Salt to taste

Directions

1. Squeeze the lemon and extract the juice and keep it aside.
2. Heat a pan, add oil and mustard seeds. Allow the mustard seeds to splutter.
3. Add curry leaves, chopped ginger, chilly powder, fenugreek powder, turmeric powder and salt. Stir well.
4. After a minute add the garlic.
5. Add the extracted lemon juice when the garlic is ¼ done.
6. Cook till the garlic is ½ done add asafoetida and remove from the flame.
7. When it cools, fill the pickle in a clean, dry bottle and pour vinegar over it.
