LIME PICKLE

Lime Pickle



Ingredients

Fresh limes -10
Chilly powder – 3 tsp
Fenugreek powder – 1 tsp
Mustard seeds – 1 tsp
Asafoetida - 1 tsp
Turmeric powder – ½ tsp
Chopped ginger – ½ tsp
Chopped garlic – ½ tsp
Gingely oil – 3 tsp
Vinegar -2 tsp
Salt to taste
Curry leaves

Directions

1. Wash, wipe dry and cut each lime into 8 quarters.
2. Heat a pan, add oil and then mustard seeds. Allow the mustard seeds to splutter.
3. Add curry leaves, chopped ginger, garlic, chilly powder, fenugreek powder, turmeric powder and salt.Stir well.
4. After a minute remove from flame and add asafoetida powder.
5. Mix the cut lime with this.
6. Fill in a clean, dry bottle and pour vinegar over the pickle and keep for a few days to get the best taste.
