Sambhar
Ingredients
Toor Dal (Thuvaraparippu) – ½ cup
Shallots -10 Nos
Drumstick – 1
Brinjal – 2
Potato – 1
Lady’s finger – 5 Nos
Tomato - 1
Green chillies – 4 Nos
Tamarind – A gooseberry sized ball
Turmeric powder – ½ tsp
Chilly powder – 2 tsp
Coriander powder -1 ½ tsp
Asafoetida – ¼ tsp
Mustard seeds – 1tsp
Fenugreek seeds – A pinch
Vegetable oil – 1 tsp
Salt to taste

Directions
1. Cook the Toor dal in water, mash it when it is cooked well.
2. Add the cut vegetables(potato, drumstick) salt and little water and cook well.
3. Add the cut brinjal, shallots and green chillies.
4. Add oil fried chilly powder, turmeric powder, coriander powder.
5. Soak the tamarind in water , extract the flavour and discard the pulp. Add the extracted pulp and boil for 1-2 minutes.
6. Add cut lady’s finger and tomato. Boil for 3-4 minutes and add asafoetida.
7. Heat 1tsp of oil in a pan and allow mustard seeds to splutter , add shallot and curry leaves and fry it.
8. Add this seasoning into the sambhar.
9. Sprinkle fenugreek powder and mix well.
