Ingredients
Potato – 2 Nos
Green beans – few
Carrot – 2 Nos
Drumstick – 1
Elephant yam – small piece
Snake gourd - small piece
Egg plant – 3 (small) Nos
Raw banana – ½
Raw tomato – 1
Grated coconut – 1 cup
Shallots – 3 Nos
Green chillies – 4 Nos
Cumin seeds – ¾ tsp
Turmeric powder -2 tsp
Yogurt – ½ cup
Curry leaves
Coconut oil – 2 tsp
Salt to taste
Directions
1.Cut all vegetables to the same length and size.
2. Cook the potatoes, raw banana, drumsticks and elephant yam in a little water.
3. When it is half done, add the cut egg plant, carrots, snake gourd, tomato, green beans, turmeric powder and salt to taste.
4. Grind the coconut, cumin seeds, yogurt, shallots and green chillies coarsely.
5. Add the ground mixture into the cooked vegetables. Mix well.
6. Add coconut oil and sprinkle curry leaves when the raw coconut is cooked. Serve hot.
