Egg plant Stir Fry
Ingredients
Egg plant – 3
Chopped onion – ¼ cup
Red chilly powder – ½tsp
Garam masala powder – ¼ tsp
Turmeric powder – ¼ tsp
Vegetable oil – 3 tsp
Salt to taste
Curry leaves
Directions
1. Heat oil in a pan and add the turmeric powder, garam masala and red chilly powder. Add the cut egg plant, onion, salt and curry leaves. Close the pan with a lid and cook on a low flame for 4-5 minutes.
2. Open the lid and stir fry until it turns to a golden colour.
