Mango Pickle
Ingredients
Raw mangoes – 3
Red chilly powder – 4 tbsp
Mustard seeds – 1 tbsp
Turmeric powder - ½ tsp
Roasted fenugreek seeds -1 tbsp
Chopped garlic - 1 tsp
Chopped ginger -1 tsp
Asafoetida powder - 2 pinches
Gingely oil – 200 ml
Salt – 3tbsp
Curry leaves
Directions
1. Wash and wipe the mangoes dry.
2. Cut the mangoes into small pieces.
3. Heat a little oil in a pan splutter a few mustard seeds and curry leaves.Add the chopped garlic and ginger,saute for 3 minutes.
4. Add red chilly powder,turmeric powder,salt and fenu greek seeds
5. Remove the pan from the stove and add the mango pieces and asafoetida powder.
6. Mix well. Fill the pickle in a bottle or earthen jar and pour the remaining sesame oil into it.
